The Time….

Firstly, it does not take much time to prepare it. Merely 30 mins and we will be done. Hence, if you are planning to take away the dish for your grandmother who is back home, it is one of the ideal dishes!

The Ingredients…

  • One to one and a half tablespoons of vegetable oil
  • Fillet of lamb meat, which is thickly sliced
  • 250g snake beans, cut into equal pieces
  • One to one and a half tablespoon of Thai red curry
  • One cup Veg liquid stock
  • 2 sliced carrots
  • About 125 g of baby corn, diagonally halved

Other ingredients include Greek Coconut Yoghourt, Thai basil leaves, steamed jasmine rice, and sliced red chilli.

Method…

  • At first, we heat up two teaspoons of oil in a wok or a saucepan over high heat and then cook half of the lamb meat for about 2 minutes or so, till it turns brown. Now we set it aside and repeat the process with another two teaspoons of oil for the remaining lamb meat.
  • Now the chefs of our Thai food restaurant in Mornington would heat the remaining oil in the same wok or pan over medium-scale heat. They then follow it up by cooking the beans and stirring them for about a couple of minutes. The chefs then add the curry paste and stir it till it emits the aroma. They stock and carrot are added to the solution, and it is boiled over high heat. The heat then is reduced and simmered, and the pan is covered and left for about 5 minutes or so. The meat is added to the pan with all the juice and basil after that. Then they stir it with the rest of the solution. They then remove the heat, add yoghurt and again stir the stuff up.
  • Now, before serving, they would sprinkle the dish with extra basil and some chilli and then serve it with rice.
